When you are working with interesting hand-gathered ingredients, you might get some ride-alongs. At least that’s what happened in a secondary fermentation involving some wild local fruits that we gathered. We ended up with a really nice, if unwelcome, pellicle on this homebrew prototype recipe. This sucker was so eager to get into the beer, we figured why not oblige it? So now we’ve harvested it and brought it into our culture collection as Aeronaut’s first wild yeast strain.
We isolated the strain and then took a closer look. These are some handsome yeast cells! Probably Brettanomyces/Dekkera. They give off a really nice aroma when we grow them in flasks. We can’t wait to see what kinds of beers they can produce.
